Strong wherever early-fall apples are crisp (Northeast, Midwest, Mountain, PNW). South/West: when local or good storage apples hit — don’t force mealy fruit.

Ingredients

3–4 firm apples, peeled if you want, sliced ~¼ inch
2 tbsp butter (+ more for pan)
2–3 tbsp brown sugar or maple
1 tsp cinnamon
Pinch salt
1 cup flour
1 tsp baking powder
⅓ cup sugar
1 egg
½ cup milk
1 tsp vanilla
Optional: squeeze lemon on apples

Method

1. Heat oven and pan. Heat oven to 375°F / 190°C. Butter a 10-inch oven-safe skillet.
2. Cook apples. Stovetop: melt butter; toss apples with brown sugar, cinnamon, salt (lemon optional). Cook 5–8 minutes until edges soften. Spread evenly.
3. Make batter. Whisk flour, baking powder, sugar, pinch salt. Whisk egg, milk, vanilla; combine just until moist (don’t overmix).
4. Assemble. Pour batter over apples; smooth.
5. Bake. Bake 25–35 minutes until golden and a toothpick in the cake (not only apple) comes out clean.
6. Cool and serve. Cool 10 minutes; invert onto a plate if you want apple-on-top, or serve from the pan.
