Kale & white bean pot
Greens get sweeter after cooler nights. Beans make it dinner without pretending it’s summer pasta.
~25 minutes · One pot · 3–4 servings
Cooler nights — brassicas and hearty greens in most U.S. bands fall onward.
Ingredients
- 2 tbsp olive oil
- 1 onion, sliced
- 3 garlic cloves
- 1 bunch kale, chopped
- 2 cans white beans, rinsed
- 2 cups broth or water
- Salt, pepper, chili flakes
- Lemon or vinegar to finish
Method
- 1. Soften aromatics. Soften onion in oil; add garlic for 30 seconds.
- 2. Wilt kale. Add kale and a pinch of salt; wilt.
- 3. Simmer beans. Add beans and liquid; simmer 10–15 minutes.
- 4. Finish with acid. Add lemon or vinegar and pepper. Adjust salt.
Seasonal swaps
- Spinach instead of kale? Use it if that’s what’s honest near you — wilt less time.
- Deep-fall squash? Cubed roasted squash is welcome in the pot.
