Roasted fall root-vegetable tray

In season near you: when fall roots show up honest in your band — carrots, parsnips, beets, turnips, rutabaga, potatoes, sweet potatoes — one hot tray beats a pile of sad steamed cubes. Peak storage crops win; don’t force spring baby vegetables into an October story.

Strong across Northeast, Midwest, Mountain, and PNW once frosts push markets toward storage roots. South and Southwest: when sweet potatoes and storage roots lead. West Coast valleys: mix roots with late peppers only if your market is still honest.

Ingredients

  • 2½–3 lb mixed roots (carrot, parsnip, beet, potato or sweet potato, turnip — whatever is good locally), cut in about ¾–1 inch chunks
  • 2–3 tbsp olive oil
  • 1 tsp kosher salt, plus more to taste
  • Black pepper
  • Optional: 1 tsp thyme or rosemary, smashed garlic cloves, red onion wedges, splash of balsamic at the end

Method

  1. 1. Heat the oven. Heat oven to 425°F / 220°C. Line a large sheet pan, or use two — crowding steams.
  2. 2. Cut even pieces. Peel tougher skins if you want. Cut pieces a similar size so they finish together. Beets stain — keep them on one side or a separate pan if you care.
  3. 3. Toss and spread. Toss with oil, salt, pepper, and herbs. Spread in a single layer.
  4. 4. Roast. Roast 35–50 minutes, tossing once, until edges brown and centers are tender.
  5. 5. Finish. Optional: balsamic drizzle in the last 5 minutes. Taste salt.
